drug of choice: almond butter
By far one of my favorite and most simple things I've ever made...almond butter.
Two ingredients: raw organic almonds + coconut oil.
The almonds are soaked from phytic acid and dehydrated into pure heaven. Then blended together with melted coconut oil. Easy, right? There's so much beauty in knowing exactly what you're putting into your inner-terrain. Don't let big organic companies fool you with their processes and ingredients! #eatmorefat
Why soak almonds?
The natural state of almonds prohibits nutrient absorption. Kind of crazy, right? By soaking the almonds it essentially allows the nuts to come alive and be ‘sprouted,’ and lets them release their nutrients. After I soak them, I air-dry them in a dehydrator for 12-24 hours, this process allows their nutrients to be preserved. It also makes them super crunchy and delicious!
Don’t have time to soak + dehydrate, but want the deliciousness of sprouted almond butter?
We have a few sprouted almond brands that we love, the latest one we have been using is Living Intentions Activated Transitional Sprouted Almonds. And, they are on Thrive!
The speedy-recipe process:
Add 4 cups (4 c = 1 smaller mason jar tub) organic sprouted almonds to a Vitamix (or any blender that can handle processing nuts). I like to pulse the nuts for a few seconds, then blend together, pushing down the nuts when they start clinging to the sides. Once you have a semi-blended consistency (this may vary depending on blender), time for coconut oil.
Pour in 2 tablespoons melted organic + un-refined coconut oil (I use Dr. Bronner’s - also on Thrive), blend until smooth consistency.
How to sprout your almonds:
SOAK THE ALMONDS: pour 4 cups organic raw almonds into large quart size mason jar or bowl, pour in filtered water until covering all almonds. Cover with cheesecloth or paper towel and secure it with a rubber band. Leave in the fridge for 8-12 hours, or overnight.
DEHYDRATE THE ALMONDS: pour almonds into colander, rinse off. Disperse almonds evenly onto a dehydrator. Let dehydrate for up to 24 hours. When taste-testing, almonds should taste dry and have a crunch.
